Hello! Today, I am introducing a new ramen menu from Nongshim, exclusively launched at Emart, called Shin Ramyun Kimchi Stir-fried Noodles. This product is initially released as a limited edition in Korea and is expected to expand overseas soon. It seems they have made efforts to appeal more to foreigners by aligning with the Swicy trend, which means a balance of sweet and spicy flavors, and it tastes quite good! Personally, I found it better than the Shin Ramyun Stir-fried Noodles. Let’s take a closer look at what this menu is all about.

If Samyang’s Buldak Stir-fried Noodles are famous, Nongshim’s Shin Ramyun series of stir-fried noodles are also quite popular! Starting with Shin Ramyun Stir-fried Noodles, followed by Tumba, Tom Yum loved in Thailand, and Shin Ramyun Spicy Chicken popular in Japan, now Kimchi Stir-fried Noodles have been newly released. This product is exclusively sold at Emart in limited quantities. The price is 4,880 KRW for a 4-pack multipack.

The total content of this menu is 137g, and the calorie count is 545Kcal. Sodium accounts for 73% of the daily recommended intake. Compared to regular soup ramen, there is not much difference in content or calories, but being a stir-fried noodle, the sodium intake might be slightly higher. (Of course, if you consume all the soup, it would be no different from soup ramen!)

The cooking method is to add the noodles and flakes to boiling water, cook for 3 minutes, then completely drain the water, add the liquid sauce, and mix well. The cooking process itself is nothing special!

Let’s take a quick look at the components. The noodles for this menu seem to use the existing Shin Ramyun noodles. There are a total of 3 components: liquid sauce and garnish soup.

First, this menu comes with a liquid sauce! Looking at the list of ingredients, it includes canola oil, sesame oil, beef oil, etc., and since there is no separate oil soup, it seems that an oil-type sauce is provided!

Looking at the garnish, you can see that it includes large pieces of kimchi and bok choy, fitting the name Kimchi Stir-fried Noodles. The garnish in the photo is for two servings! Most of the fibrous chunks are completely dried after removing moisture, so they seem to expand significantly when boiled in water!

As soon as the hot water was ready, I immediately added the noodles and garnish soup. I didn’t realize it when I put it in the bowl, but once in the water, the amount of garnish seemed quite substantial.

The amount of garnish is important, but as mentioned earlier, you can see that it absorbs water quickly and expands significantly even with a little boiling.

After boiling the noodles and garnish, I immediately poured the sauce and mixed it! The sauce was thinner than expected, so it mixed well, and during mixing, a strong spicy aroma was quite noticeable. Haha.

Taste of Shin Ramyun Kimchi Stir-fried Noodles

Depending on the angle and lighting of the photo, it may look different, but the color itself is very red, and the aroma combines spicy ramen and kimchi, giving a quite stimulating feeling. I remembered struggling with the spiciness of Shin Ramyun Stir-fried Noodles before, so I tasted it with a bit of concern.

The basic taste is distinctly strong, and true to the name ‘Shin Ramyun Kimchi Stir-fried Noodles’, the initial taste is kimchi, and the aftertaste is ramen soup, leaving a quite unique impression. It’s like adding ramen soup instead of red pepper powder to stir-fried kimchi?

Of course, there is a stimulating taste, but as it says ‘spicy + nutty’ on the ramen package, the sesame oil adds a slightly nutty taste that lingers in the mouth. Also, as the Nongshim stir-fried noodle series continues with the Swicy trend, a slight sweetness is also noticeable!

In terms of sweetness alone, it’s slightly less than Buldak Stir-fried Noodles, but the nutty taste is more pronounced. That nuttiness is covered by the spicy and salty stimulating taste, making it a complex flavor, but you can clearly feel what the main taste is. The umami is good, and it might be quite popular among those who prefer deliciously spicy over just spicy!

The spiciness itself is slightly less than Buldak Stir-fried Noodles, and the stimulating taste is a bit milder than the basic Shin Ramyun Stir-fried Noodles. Considering the Korean palate but also thinking about exporting overseas with a focus on kimchi, it seems they have slightly reduced the overly spicy and salty taste. Even I, who can’t handle spicy food well, could eat it, but that doesn’t mean it’s not spicy!

Generally, there are menus that make you feel uncomfortable after eating, but this menu didn’t give that feeling at all. In that sense, it seems to be quite suitable for those who like slightly spicy food but find it burdensome! Among the ramen released so far, it has a quite unique feel, so it might be worth trying!
