Hello! Today’s recipe is a very simple yet flavorful Doenjang Marinated Pork Neck Grilled, which can be made in almost 20 minutes excluding the marinating time (20 minutes of marinating is sufficient). Unlike Japanese miso grilling, it becomes quite a delicious dish with our traditional Korean doenjang! It’s easy to make and visually appealing, making it a great side dish, so I’m introducing it. Let’s check out what kind of recipe it is!

Ingredient Description
The main ingredients are pork, marinade, and just a few vegetables. I prepared green onion strips and scallions, but these two are mainly for topping and fiber intake, so you can skip them if they are cumbersome.

[Recipe for 400~500g Pork Neck]
- 400~500g Pork Neck for Grilling
- Half a tablespoon of minced garlic
- 2~3 tablespoons of cooking oil
- 3 tablespoons of doenjang
- 1 tablespoon of soy sauce
- 2 tablespoons of cooking wine
- 1 tablespoon of sesame oil
- 2 tablespoons of oligosaccharide, a bit of roasted sesame seeds
- A handful of scallions (optional)
- Green onion strips (optional)
In fact, you don’t even need this much scallion, and if you buy pork neck already prepared for grilling, you can just cut it with scissors later without any knife work.

Recipe Summary
- Mix 3 tablespoons of doenjang, 1 tablespoon of soy sauce, 2 tablespoons of cooking wine, 1 tablespoon of sesame oil, 2 tablespoons of oligosaccharide, and half a tablespoon of minced garlic with 400~500g of pork neck. Marinate the mixed meat for about 20 minutes!
- While the meat is marinating, finely chop a handful of scallions.
- In a suitable frying pan, add 2~3 tablespoons of cooking oil and grill the meat evenly on both sides.
- Cut the fully grilled meat into bite-sized pieces and finish by sprinkling roasted sesame seeds and scallions on top according to your preference.
- Place the finished meat on top of green onion strips and enjoy it together according to your taste!
🥗 Ingredient Preparation Time: 25 minutes
🍳 Cooking Time: 15~20 minutes
Preparing Ingredients
First, let’s marinate the ingredients. As I mentioned, I bought the meat already prepared for grilling, so there’s no need to cut it separately. Add 3 tablespoons of doenjang, 1 tablespoon of soy sauce, 2 tablespoons of cooking wine, 1 tablespoon of sesame oil, 2 tablespoons of oligosaccharide, and half a tablespoon of minced garlic to 400~500g of pork neck!

Generally, the doenjang from the fridge is very thick, so it’s hard to mix with a spoon. Wear sanitary gloves and mix it evenly. It might be a bit cold, but it will loosen up quickly as you mix! Marinate the mixed meat for about 20 minutes!

While the meat is marinating, finely chop a handful of scallions. It’s not essential, but you can also prepare green onion strips to use as a topping at the end. You can buy pre-cut green onion strips!

Cooking
Once the meat is fully marinated, prepare to cook immediately. Since it’s 400~500g of pork neck, add 2~3 tablespoons of cooking oil to a generously sized frying pan of about 28cm and heat over medium heat.

The cooking method is really simple. Grill the well-marinated meat evenly on both sides in a pan heated over medium heat.

There is a tendency for the oil to splatter a bit, so as long as you handle this well, there shouldn’t be any major inconvenience or difficulty!

Grill for about 10 minutes on each side, making sure not to use too high a heat and to prevent the doenjang from burning.

Place the green onion strips in a suitable dish, cut the fully grilled meat into bite-sized pieces, and place it on top according to your preference.

Finish by adding roasted sesame seeds and scallions on top, and the visual will be quite impressive. It’s not essential, but the combination of green onion strips and scallions brings out the color of the simple grilled meat.

Now, let me introduce the completed Doenjang Pork Neck Grilled. You might worry that it could be salty with 3 tablespoons of doenjang, but unlike Japanese miso, using traditional doenjang with a milder taste allows you to enjoy a unique flavor different from soy sauce marinade.

Overall, since it’s pork neck, it doesn’t have a strong greasy taste, and the base of doenjang marinade provides a non-overpowering taste that you will surely appreciate.

When you’re tired of the spicy gochujang and red pepper powder marinade of Jeyuk style, why not try making a simple and delicious menu with doenjang marinade at home?

It’s great to eat with rice, and if needed, it can also be a very good dish to enjoy as a side dish. It’s a taste you won’t regret.
